Kombucha: What is this trendy setting?

Kombucha is a slightly carbonated drink, usually obtained from the fermentation of black tea, although there are currently kombucha made from other types of tea (green tea, sage, etc.) on the market.


This fermentation occurs during the reaction resulting from a mixture of tea and carbohydrates (cane sugar, fruit or honey) and a symbiotic culture of bacteria and yeasts called SCOBY in English (symbiotic colony of bacteria and East). This colony converts nearly 90% of the sugars into nutrients, B vitamins, enzymes, probiotics, vinegar, and some acids (acetic, gluconic, and yogurt), ultimately resulting in a drink that's low in sugars and rich in nutrients.
